Saturday Morning Pancakes
Happy Saturday, dear readers! Can I offer you some breakfast? How about some delicious Banana Almond Pancakes that I just whipped up? You'd like that? Great....pull up a chair!
Now, I must tell you that I have always considered myself a "pancake purist" meaning that I don't usually like things added to pancakes. No chocolate chips, whipped cream, etc. for me! So I kind of surprised myself this morning when I woke up thinking about adding banana and almonds to pancakes. Hmmmm...thought I'd give it a try! To add some "healthy" to this recipe, I used Bisquick Heart Smart mix, plain Greek yogurt and whole wheat flour in addition to the Bisquick mix. Of course the banana and almonds can be healthy choices as well.
I chopped the almonds up pretty fine to add to the mix.
Here are my ingredients in the bowl before stirring. I used one cup Bisquick Heart Smart mix, 1/2 cup whole wheat flour, one chopped banana, 1/4 cup chopped almonds, one egg, 1/2 cup plain Greek yogurt, 2 tsp. vanilla and approximately 1 cup milk. I did whisk the two flours together and then whisked in the nuts before adding the wet ingredients.
Don't ask me why...but I find making pancakes therapeutic. It's something about mixing all the ingredients together and then watching the pancake brown in the skillet. And, of course, you have something delicious to eat at the end of the process! (That always helps).
And voila...here they are in all their glory! Even though I am a pancake purist, I must admit these are pretty tasty! The next time I make these, I think I will put them in the oven for about 15 minutes at 350 degrees after they come off the skillet just to make certain the centers are completely done. These pancakes are very moist due to the banana and yogurt so there was still a slight "doughiness" in the center. The oven should take care of that.

Those look and sound delicious! I like adding things to pancakes to change up the flavor, but do enjoy them plain too. I will try these. Good tip about the oven. It's a trick to get the griddle just the right temperature, and easy to discover a doughy middle (but I eat batter...so...☺)!
